The Ultimate Greek Salad


  • Dressing
  • 6tablespoons olive oil
  • 1 1⁄2tablespoons fresh lemon juice
  • 1tablespoon red wine vinegar
  • 2garlic cloves, minced
  • 1teaspoon dried oregano (Mediterranean is best)
  • Salad
  • 1head lettuce, torn into bite-size pieces ((I use Romaine)
  • 3large plum tomatoes, seeded and coarsely chopped
  • 1English cucumber, peeled and coarsely chopped (the long, thin, almost seedless ones)
  • 1medium red onion, cut into thin rings and soaked for 10 minutes in a small bowl of ice water to make it less sharp
  • 1small green pepper, cut into thin rings
  • 3⁄4cup kalamata olive
  • 3⁄4cup crumbled feta cheese


  • Whisk dressing ingredients together until blended.
  • Season to taste.
  • Drain onion from ice water and pat dry with paper towels.
  • Combine all salad ingredients, except cheese, in large bowl.
  • Toss with dressing.
  • Sprinkle cheese over and serve.

    The name of this recipe says it all as this is The Ultimate Greek Salad! This makes a nice large family salad that was enjoyed by all. I made one small change in that I cut the olive oil in half as my lettuce was still fairly moist from washing, other than that made as written. We thought the garlic and oregano were the perfectly proportion to the other ingredients and DH who quite often does not like the stronger flavored onions thought the soaking did a nice job taking the edge off. Thanks for the post.

    This was a hit at a dinner party I just had. I think my guests liked the salad more than the main course! Dressing is fantastic, I may make a batch just to use on any salad. I will say I used a garlic press to make sure the garlic was really teeny tiny in the dressing, b/c raw garlic scares me a bit. But it turned out fantastic.

    I could literally drink this salad dressing, it is so good. I did add about 1/2 teaspoon salt to it, and in the salad I used half baby spinach, and I substituted fresh mozzarella for the feta. I love feta, but had just run out.

    I made just the dressing the night before and tried it on a regular salad. I didn't think it was that great. However, the next day I made a proper Greek salad using it and wow was it spot on. I'm not sure whether it is just particularly suited to the unique blend of ingredients in a Greek salad or whether the flavors just melded over night. In any event, as a long time Greek salad lover – this recipe is a keeper!

    Excellent! Superb! I love this dressing and salad. I made as stated but increased the red wine vinegar to three tablespoons and added 1/2 teaspoon of sugar per other recipes I saw. Not too harsh and perfect for the salad. I used light feta in my version. If you are making a good sized salad it’s a good idea to double the recipe so you have enough dressing. I’ll use this recipe a lot, thanks for posting evelyn/athens!

    It's great. I prefer it with white wine. I also chop the tomatoes in smaller pieces and grated cheese. I also add more olives. The salad is perfect for the summer, when we have fresh veggies. The whole family loves it. I recommend it.

    Made the dressing only…This was absolutely heavenly. The entire family has voted this our new favorite salad dressing! The first time I made it I made it exactly as written and it was delicious. The second time I added grated parmesan (the canned stuff) and then it was a very close duplicate of Olive Garden’s house dressing. My suggestsion…use the red wine vinegar, don’t substitute for another kind. I think this “makes” this dressing! Thanks, evelyn/athens!

    This recipe is perfection! i loooovve the dressing. i used the Pompeian pomegranate infused red wine vinegar and it is delicious. I followed the recipe exact aside from that. i did serve it with some garlic turmeric chicken on top soo good i find myself craving this at least once a week. I will cut down on the garlic next time as i used 2 large cloves in the dressing so one large or 2 small cloves should be good. 🙂 so simple yet so perfect
