Creamy Fruit Salad


Ingredients:

  • 2medium bananas, diced
  • 2medium apples, diced
  • 1lemon, juice of
  • 1(20 ounce) can pineapple tidbits, drained, juice reserved
  • 2cups sliced strawberries
  • 2cups grapes
  • 1⁄4cup pecans, chopped
  • 1(1 1/2 ounce) box sugar-free instant vanilla pudding mix or 1 (1 1/2 ounce) boxvegetarian sugar-free instant vanilla pudding mix
  • 1⁄2cup water

Directions:

  • Combine bananas, apples and lemon juice in large mixing bowl.
  • Toss until evenly coated.
  • Add pineapple, strawberries, grapes and pecans.
  • In small mixing bowl, combine pudding mix, water and pineapple juice with a wire whisk until smooth.
  • Add pudding mixture to fruit.
  • Mix gently until throughly coated.
  • Refrigerate until ready to serve.

    I made this for my family when they came for a visit. I didn’t use the sugar free pudding mix. a I used “French vanilla” instead of just the plain vanilla. Tasted great. The family loved it. I enjoyed it as well and I am not a fruit eater.

    This is an excellent recipe for fruit. My husband is a diabetic and it is wonderful to give him his fruit this way for a change.

    I took this fruit salad to a family dinner of 13 and it was the hit of the meal. The sugar-free pudding tasted wonderful and a real treat for the two diabetics in attendance. I used fresh pineapple so I replaced the reserved juice with orange juice. The pecans pulled it all together nicely. Thanks for sharing.

    I loved this. Didn’t have a small pkg of vanilla instant pudding so I used Lemon. Was really nice addition and really tasty. I just had Gastric Bypass surgery and even though I can eat sugar, I do watch how much of it I eat. I will do this one again!!
